The Underrated Low-Carb Snack

Deviled eggs! I must admit that I was not a deviled egg person for the majority of my life. I associated the appetizer with uncomfortable family events and paired it in my mind with weird jello salad. HOWEVER, when the twins told me that they were obsessed with egg salad I figured that if the two pickiest people that I know liked something I could give it's better looking, bite-sized partner another chance. This is how my deviled egg (with some kick!) recipe was born. I love spicy, crunchy foods so I added some chopped pickle and Tapatio hot sauce as you will see in the recipe below. My favorite part of all about this recipe though, is that it is high in protein and fat, but very low in carbs! SCORE for anyone trying out a ketogenic diet like myself. Another great thing is that you can really just eyeball the recipe and not worry about specific measurements if you feel confident enough for that kind of thing.

DEVILED EGGS (WITH KICK) RECIPE:

6 hard-boiled eggs

1/4 cup mayonnaise

1 teaspoon Dijon mustard

Kosher salt and ground pepper to taste

1 finely chopped pickle

A few shakes of Tapatio (also to taste)

Paprika

DIRECTIONS:

Once your eggs are hard-boiled, remove the shells, cut in half, and place all yellow yolk centers into a bowl. Mix all ingredients in bowl together. Pretty simple. Then, I take a cookie dough scooper thingamajig to spoon the mixture into the halved eggs. Sprinkle with paprika and voila! Done!
